Refugio Spegazzini Menu: Guanaco goulash and Patagonian cuisine

The Spegazzini Refuge Menu is the optional lunch included in the All Glaciers Navigation tour, served at the Spegazzini Refuge facing the glacier. It offers three options: classic (meat empanada, guanaco goulash, and mousse), gluten-free (salad, lamb casserole, and mousse), and vegetarian (vegetable empanada, lentil and vegetable casserole, and mousse), with a non-alcoholic beverage and herbal tea.

We designed it so that lunch becomes part of the scenery: hot dishes of Patagonian cuisine in a 280 m² room with a window overlooking the Spegazzini Glacier, in the Refuge that we inaugurated in 2019.

The three options on the Spegazzini Refuge Menu

Choice Entry Home Dessert
Classic Meat empanada Guanaco goulash White and dark chocolate mousse
Classic suitable for celiacs Salad (lettuce, tomato, carrot and egg) Lamb casserole White and dark chocolate mousse
Vegetarian Vegetable empanada Lentil and vegetable casserole White and dark chocolate mousse

All three include a non-alcoholic beverage and an herbal infusion. You can see the updated details on the Refuge Menu page.

Why guanaco goulash?

The guanaco is the large native herbivore of the Patagonian steppe, and its meat is lean yet intensely flavorful. Slow-cooked in a goulash with its spiced sauce, it becomes a comforting dish for a day spent on the ice. This is how we choose to tell the story of the region through food: with ingredients that evoke the landscape you're exploring. If you'd like to learn more about the animal, read our article on the wildlife of Los Glaciares National Park.

Lamb casserole and the sheep farming tradition

Lamb is central to the history of Santa Cruz, a province whose population grew up around sheep farming. On the Refugio Menu, it appears in a cazuela, a slow-cooked, brothy, and warming dish, ideal for the climate of the Bahía de los Glaciares (Glacier Bay). It is also the main option on the gluten-free menu.

Dessert and after-dinner conversation in front of the ice

All three options conclude with the same white and dark chocolate mousse, and the included herbal tea provides the perfect excuse for lingering after the meal. This is the moment our guests enjoy most: a warm cup in hand, the window overlooking the Spegazzini, its cliffs rising up to 135 meters above the lake, filling the entire landscape. If the day is calm, the terrace is the ideal spot to finish your coffee and listen to the ice clinking.

Vegetarian and gluten-free option

  • Vegetarian: Vegetable empanada and lentil and vegetable casserole, a hearty dish that has nothing to envy from the rest.
  • Suitable for celiacs: Fresh salad as a starter and lamb casserole as a main course, with the same mousse for dessert.
  • Other needs: If you have a different dietary restriction, please let us know when booking through our contact channels so we can assist you.

Why is it a good idea to book it with the tour?

The Refuge Menu is an optional addition to the All Glaciers Navigation tour , which includes 7 hours of sailing and approximately 10 hours of daytime activities with transfers. Adding it to your booking offers specific advantages:

  1. Choose your option in advanceespecially if you are celiac or vegetarian.
  2. You solve the main meal of the day without having to carry food from El Calafate.
  3. You eat at the right time: Lunch arrives at Spegazzini Base, after sailing through the Upsala and the Seco and Heim glaciers.
  4. Enjoy it with a view: The main living room has a picture window overlooking the Spegazzini and a 120 m² terrace.

If you prefer something else, there is a cafeteria on board and a market at the Refuge.

Refuge or Captain's Club Menu

Those seeking a more extensive culinary experience can choose Captain's Club : a preferred cabin, a welcome with coffee, tea, hot chocolate, and pastries, a "Spegazzini Moment" with Patagonian charcuterie board, wines, and beer, a "Refuge Moment" with dishes such as guanaco goulash, chicken curry, or Patagonian lamb casserole, and a sweet finale with a toast. It is served in a private 80 m² dining room in the Refuge. The Refuge Menu, on the other hand, is the option for a fine lunch without changing cabins.

Add the Refuge Menu to your browsing
